Bu çalışmada, γ-orizanol+β-sitosterol karışımı oleojelatör olarak kullanılarak
mısır yağı oleojeli elde edilmiş, mısır yağı oleojeli ve oleojel emülsiyonunun
Frankfurter tipi sosis üretiminde hayvansal yağ yerine kullanımı araştırılmıştır.
Çalışmanın ilk aşamasında, farklı konsantrasyonlarda (%6, %7, %8, %10, %12
ve %15, w/w) oleojelatör kullanılarak 6 farklı oleojel oluşturulmuş ve elde edilen
oleojeller karakterize edilmiştir. Fourier dönüşümlü kızılötesi spektroskopisi analizi,
oleojel bileşenleri arasında hiçbir kimyasal etkileşim olmadığını ve jel ağı yapısının,
moleküllerin kendiliğinden organize olması ile ortaya çıktığını göstermiştir. Yapılan
tekstür profil analizi, oleojellerin toplam sterol konsantrasyonu arttıkça sertlik
değerlerinin de arttığını ortaya koymuştur. Elde edilen oleojel örneklerinde yapılan
oksidasyon analizlerinde, örneklerin 60 gün süresince oksidatif olarak stabil oldukları
belirlenmiştir.
İkinci aşamada %10 (w/w) oleojelatör konsantrasyonu ile hazırlanan oleojel ve
bu oleojel kullanılarak oluşturulan oleojel emülsiyonu, sosis formülasyonunda %50 ve
%100 hayvansal yağ yerine kullanılmıştır. Sosislerde yapılan duyusal analiz
sonuçlarına göre, %50 oleojel+%50 hayvansal yağ içeren sosis örneği beğeni görüp,
hayvansal yağ içeren kontrol grubuyla benzer kabul edilebilirlik puanı alırken,
tamamen mısır yağı içeren kontrol grubu, en az tercih edilen örnek olmuştur. Oleojel
veya oleojel emülsiyonu ile kısmen veya tamamen ikame edilen tüm sosis örneklerinin
toplam doymuş yağ asidi içeriğinin, hayvansal yağlı kontrol örneğine göre önemli
düzeyde azaldığı, çoklu doymamış yağ asitlerinin doymuş yağ asitlerine oranının ise
yine önemli derecede arttığı belirlenmiştir. Tekstür profil analiz sonuçları, sadece
oleojel ile oluşturulmuş sosis örneğinin, tüm tekstürel parametreler açısından
hayvansal yağlı kontrol grubuna benzer olduğunu göstermiştir. Sosislerin oksidatif
stabilitesi değerlendirildiğinde, hemen hemen tüm örneklerin depolamanın ilk günü ve
son gününde benzer serbest yağ asidi, konjuge dien ve tiyobarbitürik asit reaktif madde
değerlerine sahip olduğu görülmüştür. In this study, corn oil oleogel was prepared with γ-oryzanol and β-sitosterol
mixtures as oleogelator. The usage of corn oil oleogel and oleogel emulsion as a
substitute for animal fat in Frankfurter sausage production has been investigated.
In the first part of the study, 6 oleogels with different concentrations (6%, 7%,
8%, 10%, 12% and 15%, w/w) were prepared and these oleogels were characterized.
Fourier transform infrared spectroscopy analysis showed that there was no chemical
interaction between the oleogel components and the gel network structure was formed
by the self-organization of molecules. As a result of the texture profile analysis, it was
revealed that the hardness values of the oleogels increased as the total sterol
concentration increased. It was determined that the oleogel samples were oxidatively
stable for 60 days.
In the second part, the oleogel (10% concentration, w/w) and the oleogel
emulsion were used instead of 50% and 100% animal fat in the sausage formulation.
According to the sensory analysis results of the sausages, the sausage sample
containing 50% oleogel+50% animal fat received a similar acceptance score with the
control group containing animal fat, while the control group containing all corn oil was
the least preferred sample. It was determined that the total saturated fatty acid content
of all sausage samples containing the oleogel or oleogel emulsion partially or
completely decreased significantly compared to the animal fat control sample, and the
ratio of polyunsaturated fatty acids to saturated fatty acids increased significantly. The
texture results showed that the sausage sample formed with only oleogel was similar
to the animal fat control group in terms of all textural parameters. When the oxidative
stability of sausages was evaluated, it was seen that almost all samples had similar free
fatty acid, conjugated diene and thiobarbituric acid reactive substances values on the
first and last day of storage.
