Abstract
i.GÖKKUŞAĞI ALABALIĞI (Oncorhynchus mykiss, Walbaum, 1792)'NINDUMANLANMASINDA TALAŞ TİPİNİN BENZO(A)PYRENE İÇERİĞİNEETKİSİÖZET :Gökkuşağı alabalıkları (Oncorhynchus mykiss, Walbaum, 1792) meşe, kayın vekarışık (% 35 meşe, % 35 kayın ve %30 çam) olmak üzere 3 farklı odun talaşı ile sıcakdumanlanmış, vakum paketlenmiş ve-18oC'de 13 ay süre ile depolanmıştır. Yapılanvaryans analizi sonucunda benzo(a)pyrene değerleri bakımından gerek gruplar gerekseaylar arasındaki farklılıklar istatistiksel açıdan önemli (P<0.05) bulunmuştur.Dumanlandıktan hemen sonra yapılan benzo(a)pyrene analizinde en yüksekbenzo(a)pyrene değeri 0,418 µ/kg olarak karışık odun talaşında bulunmuştur. Tümgruplar benzo(a)pyrene değeri bakımından Türk Gıda Kodeksinde belirtilen 1 µ/kgmaksimum kalıntı sınır değerini geçmemiş ve depolamanın 11. ayından sonra hiçbirgrupta benzo(a)pyrene bulunamamıştır.Depolama süresince yapılan aylık analizlerde elde edilen TBA değerleribakımından hem gruplar hem de aylar arasındaki farklılıklar istatistiksel açıdan önemli(P<0.05) bulunmasına karşın ürün tüm gruplarda iyi kalitede bulunmuştur. TVB-Ndeğerleri bakımından da gruplar ve aylar arasındaki farklılıklar önemli (P<0.05)bulunmuş ve sadece kayın talaşı ile dumanlanan grup, 13 aylık depolama süresi sonunda35 mg/100 gr olan pazarlanabilirlik sınır değerini geçmiştir.Anahtar Kelimeler : Benzo(a)pyrene, Dumanlama, PAH, TVB-N, TBA, HPLC,Gökkuşağı Alabalığı
ii.EFFECTS OF DIFFERENT SAWDUSTS ON CONTENTS OFBENZO(A)PYRENE IN THE SMOKING OF RAINBOW TROUT (Oncorhynchusmykiss, Walbaum, 1792)ABSTRACT:Rainbow trout (Oncorhynchus mykiss, Walbaum, 1972) smoked by 3 differentsawdusts such as oak, beech and the mixture of oak % 35, beech % 35, pine % 30 andthey were vacum packed and kept at-18oC for 13 months. As a result of varianceanalysis, the differences in the amounts of benzo(a)pyrene between groups and alsomonths were significant (P<0.05) statistically. After smoking the highest value ofbenzo(a)pyrene was determined in the group smoked by mixture of wood sawdusts as0.418 µ/kg. The amounts of benzo(a)pyrene in the smoked fishes didn?t exceed theCodex maximum residue limit of 1 µ/kg and no benzo(a)pyrene was determined afterstorage of 11 months.The fish in all groups was in good quality in the amounts of TBA obtained bymonthly analysis during the storage period. The differences in the amounts of TBA andalso TVB-N between groups and also months were found significant (P<0.05)statistically. But, only the group smoked by beech sawdust exceeded the marketablelimit of 35 mg/100 gr at the end of the storing period of 13 months.Key Words: Benzo(a)pyrene, Smoking, PAH, TVB-N, TBA, HPLC, Rainbow Trout
