Abstract
İÜ OZ SAMSUN PİYASASINDAN ALİNAN SÜZME BALLARİN NİTELİKLERİNİN İNCELENMESİ Samsun piyasasından satın alınan 50 süzme bai örneğinin bazı fiziksel ve kimyasal analizleri yapılmıştır. Bu balların 44 ianesi süzme çiçek balı, 6 ianesi de süzme çam balıdır. Satın alınan ballarda rutubet miktarı, kül miktarı, nişasta aranması, ticari glikoz aranması, suni boya aranması, viskozite tayini, toplam şeker tayini, invert şeker tayini, sakkaroz tayini, suda çözünmeyen katı madde tayini, formol sayısı tayini, diastaz sayısı tayini, hidroksimeüHurfurol tayini, polen aranması, pH ve asittik iayinleri yapılmıştır. Bu tayinlerin sonucunda örneklerin bazılarının yasal sınırlamalara uymadığı görülmüştür.
İV ABSTRACT QALITY EVALUATION OF SOME EXTRACTED HONEY SAMPLES OBTAINED FROM SAMSUN MARKET The physical and chemical analysis of 50 extracted honey samples purchased from Samsun markets were extracted floral honey and 8 of them were extracted honeydew honey. The samples were analysed for moisture, ash, viscosity, total sugar, invert sugar, sucrose, water insoluble solids, formol number, diastase activity, hydroxymeihyl furfurole, pH and titratabfe acidity contents. Also, the presence of starch, commercial glucose, artificial coloring agent and pollens were analysed. In conclusion, the physical and chemical characteristics of some of the honey samples investigated in this study didrit agree with the legal specifications.
