Abstract
Bu araştırmada Sinop piyasasında satılan mezgit (Merlangius merlangus euxinusNordmann, 1840) balıklarında mikrobiyal floranın belirlenmesi amacıyla yapılmıştır.Her ay alınan12 ay süre ile her ay incelenen örneklerde fileto, mide-barsak ve solungaçlardatoplam aerob mezofil mikroorganizma toplam aerob pisikrofil mikroorganizma,koliform bakteri, Escherichia coli, Staphylococcus aureus, Salmonella ve Vibrioparaheamolyticus mikroorganizmalarının varlıkları saptanmıştır.Fileto da toplam aerob mezofil mikroorganizma toplam aerob psikrofilmikroorganizma, koliform bakteri, S.aureus, ve V.paraheamolyticusmikroorganizmaların minumun ve maksimum sayıları sırasıyla 1,52±0,24 log cfu/g,±5,26±0,02 log cfu/g,3,52±0,04 log cfu/g, 4,61±0,04 log cfu/g, 1,68±0,19 log cfu/g, 4,48±0,03± ± ± ± ±log cfu/g, 1,36±0,07 log cfu/g, 1,94±0,07 log cfu/g, 1,15±0,02 log cfu/g, 2,24±0,02 log cfu/g± ± ± ±olarak tespit edilmiştir. Mide-barsakda toplam aerob mezofil mikroorganizma toplamaerob pisikrofil mikroorganizma, koliform bakteri, S.aureus, ve V.paraheamolyticusmikroorganizmaların minumun ve maksimum sayıları sırasıyla 2,33±0,06 log cfu/g,±4,76±0,03 log cfu/g,1,46±0,15 log cfu/g, 4,53±0,05 log cfu/g, 2,04±0,04log cfu/g, 4,47±0,02± ± ± ± ±log cfu/g,1,23±0,03 log cfu/g, 2,47±0,02 log cfu/g, 1,37±0,05 log cfu/g, 2,32±0,02 log cfu/g±± ± ±olarak tespit edilmiştir. Solungaçlarda toplam aerob mezofil mikroorganizma toplamaerob pisikrofil mikroorganizma, koliform bakteri, S.aureus, ve V.paraheamolyticusmikroorganizmaların minumun ve maksimum sayıları sırasıyla 3,84±0,12 log cfu/g,±5,46±0,03 log cfu/g,3,24±0,08 log cfu/g, 5,53±0,05 log cfu/g,2,25±0,06 log cfu/g, 4,88±0,04± ± ± ± ±log cfu/g,2,22±0,04 log cfu/g, 4,15 ± 0,12 log cfu/g, 2,06±0,03 log cfu/g, 2,57±0,07 log cfu/g± ± ±olarak tespit edilmiştir.statistiki olarak toplam aerob mezofil mikroorganizma, toplam aerob pisikrofilmikroorganizma, S.aureus, ve V.paraheamolyticus mikroorganizma sayılarıbakımından fileto ve mide-barsak arasında önemli bir fark bulunmazken (p>0,05), filetove solungaçlar arasında fark önemli bulunmuştur (p<0,05). Mide-barsak ve solungaçlararasında toplam aerob mezofil mikroorganizma, toplam aerob pisikrofilmikroorganizma ve S.aureus mikroorganizma sayıları bakımından fark bulunurken(p<0,05), V.paraheamolyticus mikroorganizma sayıları bakımından fark önemsizbulunmuştur (p>0,05). Koliform bakteri sayıları bakımından ise fileto, mide-barsak vesolungaçlar arasında fark önemsiz bulunmuştur (p>0,05).Fileto ve mide-barsak örneklerinde Nisan, Mayıs, Eylül ve Ekim aylarında,solungaç örneklerinde ise Mart, Nisan, Mayıs, Eylül ve Ekim aylarında E.coli tespitedilmiştir. Filetoda Salmonella izole edilemezken mide-barsak ve solungaçlarda Nisan,Mayıs, Eylül ve Ekim aylarında izole edilmiştir.Anahtar kelimeler: Mezgit balığı, Merlangius merlangus euxinus, mikrobiyal flora

On the other hand there is serious difference between these mikroorganismcounts of fish fillet and fish gill (p<0,05). A difference between total aerob mezofilmikroorganism, total aerob pisikrofil mikroorganism, S.aureus mikroorganism countsof fish stomach-intestines and fish gill was observed (p<0,05), but unessential differencebetween V.paraheamolyticus mikroorganism counts of fish stomach-intestines and fishgill was observed (p>0,05). About Koliform bacterium counts, there is unimportantdifference among fish fillet, fish stomach-intestines and fish gill (p>0,05).E.coli mikroorganisms were seen on fish fillet and fish stomach-intestines samplesin April, May, September, and October. Also E.coli mikroorganisms were seen on fishgill samples in March, April, May, September and October. Salmonella mikroorganismswere not insulated on fillet samples.
