İnek sütü ve soya sütü karışımlarının pıhtılaşma özellikleri 1.Kalsiyum sülfatla pıhtılaşma

Abstract

Bu çalışmada soya sütüne %5,10,15,20,25,30 ve 35 oranlarında inek sütü katılmış ve karışım kalsiyum sülfatla pıhtılaştırma özellikleri incelenmiştir. Elde edilen sonuçların istatistiksel analizine göre, ilave edilen inek sütü oranlarındaki artışın pıhtı miktarı, pıhtı kurumaddesi ve peynir suyu miktarına önemli bir etkide bulunmazken, peynir suyu kurumaddesi, yağı ve pH'sına önemli etkide bulunmuştur.

In this study cow's milk was added to soy milk in rate of 5-10-20-25-30 and 35 and the coagulation properties of the blends calcium sulfate added were investigated. The statistical analysis of the data indicates that although the increasing of added cow's milk had no significant effect on the curd amount, curd dry matter and whey amount and it has significantly effected the pH of the whey and the dry matter and fat loosed by the removed whey.
