Değişik Reçellerin Meyve Oranları İle Kül İçerikleri Arasındaki İlişki

Abstract

Bu araştırmada, Samsun il merkezinde en çok tüketilen çilek, kaysı, vişne, incir ve ayva reçellerinin meyve oranları tespit edilmeye çalışılmış ve meyve oranlan ile örneklerin kül değerleri arasında bir ilişki olup olmadığı tartışılmıştır. Yapılan analiz sonucunda, meyve oranı açısından 36 örnekten % 63.89' unun Türk reçel standartlarına uygun olduğu bulunmuştur. Ayrıca, örneklerin kül değerleri ile meyve oranları arasında önemli bir korelasyon (r0.36*) olduğu saptanmıştır.: In this research, the fruit ratios of the strawberry, apricot, sour cherry, fig and quince jams, which are the most consumed jams in Samsun were investigated and whether there is a relation between the fruit ratios and the values of ash or not was discussed. As a result, it was found that 63.89% of the samples was suitable with the Turkish Jam Standard as regards the fruit ratio. Also, an important correlation (r0.36*) between the fruit ratio and the ash value of the samples were determined.
