Abstract
Meyve ve sebzeler fitokimyasal içerikleri nedeniyle insan sağlığı ve beslenmesinde önemli bir yer tutmaktadır. Bu meyvelerden biri olan erik tüm dünyada yayılım göstermektedir. Yabani olarak veya kültüre alınmış olarak birçok çeşidinin ülkemizde yetiştiği bilinmektedir. Bu çalışma, ülkemizde yabani olarak yetişen 3 farklı eriğin fiziksel, kimyasal ve antioksidan özelliklerini belirlemek amacıyla yapılmıştır. Bunun için Kastamonu'dan 25'er farklı lokasyondan hasat edilen çakal eriği (Prunus spinosa L.), karaca erik (Prunus domestica L.) ve üryani eriği (Prunus domestica L.) örnekleri analiz edilmiştir. Çalışma sonunda; çakal eriğinin kalsiyum (807.99±411.87 mg/kg), magnezyum (188.1±68.40 mg/kg), demir (6.79±5.42 mg/kg), çinko (8.24±2.74 mg/kg), bakır (1.75±0.51 mg/kg), mangan (1.44±0.72 mg/kg), toplam fenolik madde (4406.77±2472.98 mg/kg) ve toplam antosiyanince (645.7±198.86mg/kg) zengin olduğu, yüksek antioksidan aktivite gösterdiği (FRAP, 149.13±87.76 mmol/g; EC50, 0.61±0.58 mg/ml), karaca eriğin de potasyumca (2760.91±515.36 mg/kg) zengin olduğu saptanmıştır. Analiz edilen eriklerin fiziksel ve kimyasal özelliklerinin birbirinden istatistiksel açıdan farklı olduğu tespit edilmiştir (p<0.05). Tüm eriklerde toplam fenolik madde, antosiyanin içerikleri ile antioksidan özellikleri arasında önemli korelasyon saptanmıştır.
Fruits and vegetables have an important place in human health and nutrition due to their phytochemical contents. One of these fruits, plum spread all over the world. It is known that many species are grown in our country as wild or cultured. This study was carried out to determine the physical, chemical and antioxidant properties of 3 different plums growing wild in our country. For this, the samples of blackthorn (Prunus spinosa L.), karaca (Prunus domestica L.) and uryani (Prunus domestica L.) plums taken from 25 different locations were analyzed from Kastamonu. At the end of study; it is determined that the blackthorn plum was rich in calcium (807.99±411.87 mg/kg), magnessium (188.1±68.40 mg/kg), iron (6.79±5.42 mg/kg), zinc (8.24±2.74 mg/kg), copper (1.75±0.51 mg/kg), manganese (1.44±0.72 mg/kg), total phenolics (4406.77±2472.98 mg/kg), total anthocyanins (645.7±198.86 mg/kg), and had high antioxidant activity levels (FRAP, 149.13±87.76 mmol/g; EC50, 0.61±0.58 mg/ml), besides the karaca plum was high in potassium (2760.91±515.36 mg/kg) content. The physical and chemical properties of the plums analyzed were statistically different (p <0.05). The significant correlation was determined among the total phenolics, anthocyanin contents and antioxidant activities in all plums.
