Abstract
Bu çalışmada, Nantes çeşidi havuçlar kurutularak karanlıkta, oda sıcaklığında depolanmıştır. 6 aylık depolama sonunda toplam şekerde % 4.02, sakarozda % 14.67, askorbik asitte % 51.56, toplam karotenoidde % 30.03' lük kayıp, invert şekerde ise % 18.33'lük artış saptanmıştır.
In this study, the Nantes variety carrots were dehydrated and stored in the darkness at room temperature. At the end of 6 month storage, there was a decrease at the total sugar, sucrose, ascorbic acid and total carotenoid (4.02%, 14.67%, 51.56% and 30.03% respectively) and an increase at the invert sugar (18.33%) contents of the samples.
