Trabzon Vilayeti'nde Değirmenlerin Üretime Katkısı (1800-1907)

Abstract

Değirmenler bir bölgedeki üretimin incelenmesinde başvurulması gereken en önemli kaynaklardan bir tanesidir. Tezimizde XIX. yüzyılda Trabzon Vilayeti'nde yapılan üretimi değirmenler üzerinden inceledik. Öncelikle bölgedeki değirmen türlerini ve üretim kapasitelerini tespit ettik. Sonrasında ise tespit ettiğimiz değirmenlerin Trabzon Vilayeti toprakları üzerinde hangi şartlarla hangi bölgelerde yoğunlaştığını ve sahiplerini tespit ettik. Bu belirlemelerde bulunduktan sonra ise değirmenlerde öğütülen ürünleri, bu ürünlerin gerekli yerlere nakliyatını, ambarlarda saklanmasını ve fırınlarda çeşitli unlu gıdalara dönüştürülmesi süreçlerini ve tahıl üretimini etkileyen faktörleri inceledik. Özetleyecek olur isek Trabzon Vilayeti toprakları üzerinde üretilen tahılların değirmenlerde işlenmesinden sofralara gelene kadarki süreci inceledik ve önemli tespitlerde bulunduk. Bununla birlikte çalıştığımız dönem olan XIX. yüzyılda Trabzon Vilayeti'nin sosyal, ekonomik ve teknolojik gelişimi üzerine de tespitlerimiz olmuştur. Değirmenlerin çalışma sistemlerini oluşturan çark sistemi kullanılarak birçok imalathane kurulmuş ve bu imalathaneler zamanla kuruldukları dönemlerin adeta birer fabrikası niteliğinde işletmelere dönüşmüşlerdir. Bu nedenle değirmenler yalnızca üretim tarihi açısından değil aynı zamanda teknoloji ve sanayi tarihi açısından da incelenmesi gereken önemli mekânlardır.

The mills are one of the most important sources to be consulted in the study of production in a region. In our work we studied the production done in 19th century in the province of Trabzon through mills. Firstly, we have identified the types of mills and production capacities in the region. Afterwards, we determined the conditions in which the mills we determined and the regions in which the mills were concentrated and their owners were determined on the lands of Trabzon Province. After these determinations, we have examined the milled products, the transport of these products to the required locations, the storage in the barns, and the various baking processes and the factors affecting cereal production. In summary, we studied the process of processing between grains produced and the process of coming to the table on the lands of the province of Trabzon. And we have important determinations. We have also identified the social, economic and technological development of the province of Trabzon in the 19th century. Many mills have been established by using the wheel system which constitutes the working systems of the mills and these mills have turned into factories of the period they were founded in time. For this reason, mills are important not only in terms of production history but also in terms of technology and industry history.
