Abstract
Bu çalışma, Samsun ve yöresinde doğal olarak yetişen ve yöre halkı tarafından tüketilen yabani bitkilerin nitrat içe-riğinin saptanması amacıyla yapılmıştır. Çalışmada kullanılan 20 çeşit yabani bitki Mart-Mayıs 2001'de Samsun ve çevre-sinden temin edilmiştir. Yabani bitkilerde nitrat içeriği 32,10-8923,50 mg/kg (303,69-107253,61 mg/kg kuru maddede) arasında bulunmuştur. En yüksek nitrat miktarı kazayağında (Falcaria vulgaris Bernh.), en düşük ise kırçanda (Smilax excelsa L.) saptanmıştır.
The purpose of this study was to determine the nitrate content of naturally grown edible wild plants, consumed in Sam-sun region. The 20 edible wild plants variétés were collected in and around Samsun between March and May 2001. The nitrate contents of wild plants were found between 32,10-8923,50 mg/kg (303,69-107253,61 mg/kg in dry matter). The maximum nitrate content was found in kazayağı (Falcaria vulgaris Bernh.) and the minumum in kırçan (Smilax excelsa L.).
