Publication: Tokat İli Erbaa İlçesinin Asma Yaprağı Üretim ve Pazarlama Yapısı İle Maliyet Analizi
Abstract
Asma yaprağı, hem tarihsel hem de kültürel açıdan zengin bir geçmişe sahip olup, Akdeniz ve Orta Doğu mutfaklarının vazgeçilmez bir parçasıdır. Asma yaprağı, özellikle Türk mutfağında yaprak sarması gibi geleneksel yemeklerde yaygın olarak kullanılmaktadır. Türkiye, asma yaprağı üretiminde önemli bir yere sahiptir ve Tokat'ın Erbaa ilçesi, bu üretimin merkezlerinden biridir. İlçede 21.020 dekar alanda üretilen coğrafi tescilli Erbaa narince bağ yaprağı hem yurt içinde hem de yurt dışı piyasasında yoğun ilgi görmektedir. 2023 yılında Erbaa'dan yaklaşık 100 milyon dolar değerinde asma yaprağı ihraç edilmiştir. Erbaa asma yaprağı, başta Avrupa ülkeleri olmak üzere, Amerika Birleşik Devletleri, Kanada, Avustralya ve Körfez ülkeleri gibi birçok ülkeye ihraç edilmektedir. Böylelikle asma yaprağı üretiminin ilçe için son derece önemli olduğu vurgulanmaktadır. Bu çalışma, Tokat'ın Erbaa ilçesinde asma yaprağı üretimini ele almaktadır.Araştırmanın ana kitlesini Tokat ili Erbaa ilçesinde bağcılık yapan asma yaprağı üreticilerinden anket yoluyla toplanan verilerden oluşmaktadır. Ayrıca araştırma bölgesinde bulunan kamu kuruluşlarının kayıt ve dökümanları ile araştırma bölgesinde daha önce yapılmış çalışmalardan da yaralanılmıştır. Çalışmada, Erbaa'daki asma yaprağı üretiminin mevcut durumu incelenmiş, üretim süreçleri detaylandırılmıştır. Araştırma kapsamında üretim aşamaları; bağ dikimi, bakımı, yaprak hasadı ve işleme süreçlerini kapsamaktadır. Araştırma sonuçları Erbaa'da asma yaprağı üretiminin ekonomik açıdan sürdürülebilir olduğunu göstermektedir. Ancak, üreticilerin daha karlı bir üretim gerçekleştirebilmeleri için bazı tarımsal ve finansal stratejilerin geliştirilmesi gerektiği belirlenmiştir. Öneriler arasında; modern tarım tekniklerinin benimsenmesi, devlet desteklerinin artırılması, kooperatifleşmenin teşvik edilmesi ve pazar çeşitliliğinin sağlanması yer almaktadır. Bu sayede hem yerel hem de ulusal düzeyde asma yaprağı üretiminde verimlilik artışı sağlanabilecektir. Asma yaprağı pazarlamasında, ürün kalitesi ve müşteri memnuniyeti ön planda tutulmalı, yenilikçi ve müşteri odaklı bir yaklaşım benimsenmelidir.
The vine leaf has a rich history both historically and culturally and is an indispensable part of Mediterranean and Middle Eastern cuisines. Vine leaves are widely used in traditional dishes such as leaf wrapping, especially in Turkish cuisine. Turkey has an important place in the production of vine leaves, and the Erbaa district of Tokat is one of the centers of this production. Geographical registered Erbaa narince vineyard leaf produced on an area of 21.020 decares in the district attracts great interest both in the domestic and foreign markets. about 100 million dollars worth of vine leaves were exported from Erbaa in 2023. Erbaa vine leaf is exported to many countries, especially European countries, such as the United States, Canada, Australia and Gulf countries. Thus, it is emphasized that vine leaf production is extremely important for the district. This study deals with the vine leaf production in Erbaa district of Tokat.The main mass of the research consists of data collected through a survey from vine leaf producers who are engaged in viticulture in Erbaa district of Tokat province.In addition, the records and documents of public organizations located in the research area and previous studies conducted in the research area have also been injured. In the study, the current state of vine leaf production in Erbaa was examined and the production processes were detailed. Within the scope of the research, the production stages include vineyard planting, maintenance, leaf harvesting and processing processes. The research results show that vine leaf production in Erbaa is economically sustainable. However, it has been determined that some agricultural and financial strategies should be developed in order for producers to realize a more profitable production. Sundays Decrees; adoption of modern agricultural techniques, increasing government support, promotion of cooperativization and ensuring market diversity are among the suggestions. In this way, an increase in productivity in vine leaf production will be achieved at both local and national levels. In vine leaf marketing, product quality and customer satisfaction should be kept at the forefront, an innovative and customer-oriented approach should be adopted.
