Abstract
1995 ve 1996 yıllarında yapılan bu araştırmada Erbaa (Tokat) ekolojik koşullarında yoğun olarak yetiştirilen Berryesssa ve Bigarreau Napoleon kiraz çeşitlerinin kağıt ambalaj, plastik ambalaj ve tüketici ambalajlı olarak muhafaza edilerek, meyvelerin kalitelerinin korunması ve muhafaza sürelerinin uzatılması amaçlanmıştır. Ambalajlı kiraz meyveleri depolama süresinin sonuna kadar 0 °C'de % 85-90 oransal nemde muhafaza edilmiştir. Araştırma sonuçlarına göre, plastik ambalaj ve tüketici ambalajı muhafaza süresi boyunca ağırlık kayıplarını azaltmıştır. Kağıt ambalajlı meyvelerde ağırlık kayıpları artmıştır. Suda çözünebilir kuru madde miktarı muhafaza süresince değişim göstermiştir. Kirazlardaki titre edilebilir asittik düzeyi soğukta muhafaza süresince azalmıştır. Ambalaj materyallerinin suda çözünebilir kuru madde ve titre edilebilir asitlik üzerine etkileri önemsiz bulunmuştur. Mantarsal bozulmalar plastik ambalajlı ve tüketici ambalajlı meyvelerde artmıştır. Mantarsal bozulmaların artışı soğukta muhafaza süresi ile doğru orantılıdır. Muhafaza süresinin sonunda Berryessa ve Bigarreau Napoleon kiraz çeşitlerinin meyve kabuğu renginde koyulaşma meydana gelmiştir. Tat analizlerinde görünüş-renk, arama, sululuk, tat ve pazar değeri gibi özellikler incelenmiştir. Berryessa ve Bigarreau Napoleon kiraz çeşitlerinde bu özelliklerde muhafaza süresince azalmalar meydana gelmiştir. Sonuç olarak, plastik ve tüketici ambalajlı olarak her iki kiraz çeşidinin 1-2 hafta muhafaza edilebileceği belirlenmiştir. Anahtar Kelimeler : Kiraz, Muhafaza, Ambalaj, Modifıye Atmosfer
THE EFFECTS IS DIFFERENT PACKAGE MATERIALS ON THE STORAGE LIFE and QUALITY IN BERRYESSA and BIGARREAU NAPOLEON CHERRIES CULTIVARS ABSTRACT In this research carried out between 1995 and 1996 it was aimed to lengthen the storage life and keeping the quality of intensively grown cherry cultivar, Berryessa and Bigarreau Napoleon under Erbaa (Tokat) ecological conditions by packaging them in paper plastic and consumer material. Packaged cherry fruits storaged in 0 °C and 85-90 % RH untill end of storage period. According to the results of the research, plastic package and consumer package reduced the weigh losses, during cold storage. The paper material increased the weigh losses in cherry fruits. T.S.S. amount showed variation through storage period. The titreable acidity of cherry fruits a few reduced during the cold storage period. The effects of the package materials on the TSS and the titreable acidity were not significiant. The fungal disorders of fruits increased in plastic material and consumer package. The fungal disorders increased positively with the extend of the cold storage. The color of fruit shell is darken in end of storage period in Berryessa and Bigarreau Napoleon cherry cultivars. Taste tests examined seem-color, aroma, watery, swetness and market value. This values decreased in Berryessa and Bigareau Napoleon cherries cultivars during cold storage period. Finally, it determined that also two cherry cultivars could be storaged in plastic and consumer package at 1-2 week.Key Words : Cherry, Storage, Package, Modified Atmosphere.
