Abstract
Yabani olarak yetişen meyveler gerek halk ekonomisi gerekse sağlık açısından önemlidir. Bu meyveler, önemli miktarda biyoaktif bileşiklere sahiptir. Ursolik asit ve oleanolik asit biyoaktif pentasiklik triterpenoid bileşiklerdendir. Bu çalışma, Türkiye'de yetişen yabani meyvelerin ursolik ve oleanolik asit içeriğini belirlemek amacıyla gerçekleştirilmiştir. Çalışmada, çakal eriği (Prunus spinosa L.), kızılcık (Cornus mas L.), karayemiş (Laurocerasus officinalis L.), hanım tuzluğu (Berberis vulgaris L.), kara kuşburnu (Rosa pimpinellifolia L.), karaca erik (Prunus domestica L.) ve yaban mersini (Vaccinium arctostaphylos L.) meyveleri kullanılmıştır. Bu meyvelerin ursolik asit ve oleanolik asit içerikleri ile diğer antioksidan bileşikleri ve antioksidan aktivitesi belirlenmiştir. Ursolik asit ve oleanolik asit analizleri HPLC-DAD ile yapılmıştır. En yüksek oleanolik asit (183.51±60.46 mg.kg-1) ve ursolik asit içeriği (158.78±25.04 mg.kg-1) kara kuşburnunda, en düşük oleanolik asit (6.83±2.96 mg.kg-1) ve ursolik asit (7.73±2.62 mg.kg-1) değerleri yaban mersini meyvesinde belirlenmiştir. Kızılcık ve karaca erikte ursolik asitin varlığına rastlanmamıştır. Triterpenik asit yanında kara kuşburnunun toplam fenolik madde ve antosiyanin açısından da zengin olduğu ve yüksek antioksidan aktivite gösterdiği belirlenmiştir.
The fruits grown as wild are both important in terms of public economy and health. These fruits have significant amounts of bioactive compounds. The ursolic acid and oleanolic acid are bioactive pentacyclic triterpenoid compounds. This study was conducted to determine the content of ursolic and oleanolic acid in wild fruits grown in Turkey. In this study, the blackthorn (Prunus spinosa L.), cornelian cherry (Cornus mas L.), cherry laurel (Laurocerasus officinalis L.), barberry (Berberis vulgaris L.), burnet rose (Rosa pimpinellifolia L.), plum (Prunus domestica L.) and Caucasian whortleberry (Vaccinium arctostaphylos L.) fruits were analyzed. The ursolic acid and the oleanolic acid analyzes were performed by HPLC-DAD. The highest oleanolic acid (183.51±60.46 mg.kg-1) and ursolic acid (158.78±25.04 mg.kg-1) were found in burnet rose, while the lowest oleanolic acid (6.83±2.96 mg.kg-1) and ursolic acid (7.73±2.62 mg.kg-1) contents were determined in Caucasian whortleberry fruit. There were no any presence of ursolic acid in cornelian cherry and karaca plum fruits. There were no presence of ursolic acid in cornelian cherry and karaca plum fruits. It was found that, burnet rose is rich of total phenolic content and anthocyanins besides triterpenic acids; and have high antioxidant activity.
