Publication: Balık Fileto Çıkarma Makinesi Tasarım ve Prototip İmalatı
Abstract
Günümüzde gıda endüstrisinin her alanında, ürünlerin üretim aşamasından tüketiciye ulaşmasına kadar mekanizasyonun uygulanması kaçınılmaz bir ihtiyaçtır. Özellikle son on yılda gıda alanında en fazla gelişimin sağlandığı su ürünleri sektöründe makinelerin kullanımı daha da önem kazanmaktadır. Bu çalışma kapsamında Türkiye'de en çok avlanan ve tüketilen küçük pelajik balık türlerinden Hamsi ve Sardalya'ya yönelik fileto çıkarma prosesi için inovatif bir makine tasarım ve imalatı gerçekleştirilmiştir. Tasarım küçük işletmeler ve son kullanıcıların ihtiyaç ve talepleri doğrultusunda otomatik besleme ve yönlendirme fonksiyonunu gerçekleştirecek şekilde hidrodinamik yönlendirme sistemine sahiptir. Geliştirilen tasarım ayrıca proses öncesi ön hazırlık işlem ihtiyacını ortadan kaldıran vakum etkisi ile kesme sistemine sahiptir. Makinenin tasarım süreci Pahl ve Beitz'in sistematik tasarım yaklaşımı referans alınarak, bilgisayar destekli tasarım programları ile gerçekleştirilmiştir. Makine parçalarının imalatında hızlı prototipleme süreçleri için geliştirilen üç boyutlu baskı teknolojisinden faydalanılmıştır. Diğer komponentlerin de temini ile montaj tamamlanmış, makine çalıştırılıp test edilmiştir. Son olarak, makinenin eksik yönleri tespit edilmiş ve iyileştirmeler için veriler toplanmıştır.
Today, the application of mechanization is an inevitable need in all areas of the food industry, from the production stage to the delivery of the products to the consumer. Especially in the aquaculture sector, where the most development in the field of food has been achieved in the last ten years, the use of machines is gaining even more importance. In the present study, an innovative machine was designed and manufactured for the filleting process for Anchovy and Sardines, which are the most hunted and consumed small pelagic fish species in Turkey. The design has a hydrodynamic routing system to perform the automatic feeding and routing function in line with the needs and demands of small businesses and end-users. The design also has a cutting system with a vacuum effect, which eliminates the need for preprocessing. The design process of the machine was carried out with computer-aided design programs, with reference to the systematic design approach of Pahl and Beitz. Three-dimensional printing technology developed for rapid prototyping processes was utilized in the manufacture of machine parts. With the supply of other components, the assembly was completed, the machine was run and tested. Finally, the machine's shortcomings were identified and data were collected for improvements.
