Publication: Samsun İli Tüketicilerinin Sorumlu Tüketim Anlayışına Sahip Olma Düzeyinin Değerlendirilmesi: Sebze ve Meyve Tüketimi Örneği
Abstract
Consumers are the primary actor driving activities in the supply chain, and their failure to behave responsibly leads to wasted resources and increased carbon emissions. Despite the fundamental role of consumer behavior, the extent and nature of responsible consumption patterns and their impact on environmental are still poorly understood in the literature. Therefore, objectives of the study were to reveal the habits of fresh vegetable and fruit of final consumers, to determine the amount of fresh fruit/vegetable waste and carbon emissions generated at the household level and to explore the link between responsible consumption and carbon emission. The research data were collected from randomly selected 225 consumers living in the city center of Samsun province. The level of responsible consumption was measured by using the responsible consumption scale. The analyzed consumers were grouped according to their score elicited from responsible consumption scale with the help of the normal distribution approach. The amount of additional carbon emissions from irresponsible consumption was quantified using life cycle analysis and emission factors. Factors affecting the amount of waste generated at the consumer level and additional carbon emissions were explored by using regression analysis. Research findings showed that consumers with a high responsible consumption score had lower amounts of fresh fruit and vegetable waste and additional carbon emissions comparing to others. Research findings also revealed that practicing responsible consumption, having a larger family and increasing the frequency of fruit purchases reduced additional carbon emissions at the consumer level. It was found that there was positive relationship between additional carbon emission and frequency of vegetable purchase, the amount of waste and the amount of vegetable consumption. However, the effect of responsible consumption on the amount of waste was negative, while that of income, amount of vegetable consumption and age were positive. The research findings suggest promoting responsible consumption practices. Organizing activities and training programs to raise consumer awareness on waste management and carbon emissions may reduce the adverse effects of fresh fruit and vegetable consumption. Keywords: Fruit and vegetable supply chains, responsible consumption, carbon emission, food waste, food loss
