Abstract
Meyve işleme endüstrisi geniş bir ürün yelpazesine sahiptir. İşleme sonrası elde edilen atık ve artıklar (örneğin kayısı, şeftali, biber, domates, kuşburnu, üzüm, vişne ve keçiboynuzu meyvelerinden kalan işleme atık ve artıkları) antioksidan maddeler içermektedir.Bu çalışmada 4 farklı firmadan (Tokat/Merkez (2), Tokat/Zile, Samsun/Bafra) 3 farklı zamanda 2 tekrarlı olarak örnek alınmıştır. Toplam 78 örnekte, kuru madde, suda çözünür kuru madde, pH, kül, protein, toplam asitlik, askorbik asit, toplam fenolik madde, antosiyanin, toplam karotenoid madde ve antioksidan aktivite analizleri yapılmıştır.Bu analizler sonucunda örneklerin analiz sonuçları şu değerler arasında bulunmuştur. Kuru madde % 15.13-64.06, kül miktarı % 0.10-2.49, protein miktarı % 0.41-12.63, suda çözünür kuru madde miktarı 1.00-18.17 g/100g, pH 3.94-5.30, toplam asit 0.03-0.20 g/100g sitrik asit, titrimetrik askorbik asit 4.56-102.46 g/100g, spektrofotometrik askorbik asit 4.76-102.78 g/100g, antosiyanin içeriği 0.90-59.11 mg/100g, FRAP 46.74-3844.24 ?mol/g, toplam fenolik madde 123.50-4998.59 mg GAE/g, toplam karotenoid 2.21-286.86 mg ß-karoten/100g.Sonuçlar içerisinde en yüksek değere sahip olan örnekler; kuru madde % 64.06 kuşburnu posası, kül % 2.49 vişne sapı, protein % 12.63 üzüm posası, suda çözünür kuru madde % 18.17 kayısı posası (2mm elek), pH 5.30 vişne posası, toplam asit % 0.2 üzüm posası, titrimetrik askorbik asit 102.46 mg/100g kuşburnu posası, spektrofotometrik askorbik asit 102.78 mg/100g kuşburnu çekirdeği, antosiyanin 59.11 mg/100g vişne posası, antioksidan aktivite 3844.24 ?mol/kg kuşburnu çekirdeği, toplam fenolik madde 4998.59 mg GAE/g kuşburnu çekirdeği ve toplam karotenoid 286.86 mg/100g biber posası olarak bulunmuştur.
Fruit processing industry has wide product range. Wastes and by-products have antioxidant matter. Samples are apricot, peach, pepper, tomato, rosehip, grape, sour cherry and carob wastes and by-products.In this study, samples were collected from 4 different factories (Tokat/Centre (2), Bafra/Samsun, Zile/Tokat) in 3 different time with 2 repeat and totally 78 samples were analysed for dry matter, water-soluble matter, pH, ash, protein, total acidity, ascorbic acid, total phenolic matter, anthocyanin, total carotenoids and antioxidant activity.According to the results of these analyses, the ranges of the parameters analysed were as dry matter 15.13-64.06 %, ash 0.10-2.49 %, protein 0.41-12.63 %, water-soluble matter 1.00-18.17 g/100g, pH 3.94-5.30, total acidity 0.03-0.2 %, titrimetric ascorbic acid 102.46 mg/100g, spektrofotometric ascorbic acid 4.76-102.78 g/100g, anthocyanin 0.90-59.11 mg/100g, antioxidant activity (FRAP) 46.74-3844.24 ?mol/g, total phenolic matter 123.50-4998.59 mg GAE/g and total carotenoids 2.21-286.86 mg ß-karoten/100g.The results of the investigated parameters that has the highest value are; dry matter 64.06 % rosehip pomace, ash 2.49 % black cherry stem, protein 12.63 % grape pomace, water-soluble matter 18.17 % apricot pomace (2mm mesh), pH 5.30 black cherry, total acidity 0.2 % grape pomace, ascorbic acid 102.46 mg/100g rosehip seed, anthocyanin 59.11 mg/100g black cherry, antioxidant activity 3844.24 ?mol/g rosehip seed, total phenolic matter 4998.59 mg GAE/g rosehip seed and total carotenoids 286.86 mg/100g pepper pomace.
