Abstract
Bu çalışma, 2017 yılında Samsun ilindeki 12 fındık kırma tesisi ile yüz yüze anket çalışması yapılarak gerçekleştirilmiştir. Araştırma sonuçlarına göre; Tesislerin tam kapasite ile çalıştığı dönemde 1278 personel çalıştırdıkları, bunların 1037'sinin vasıfsız personel olduğu ve işletmelerin en az bir mühendis bulundurdukları tespit edilmiştir. İşletmelerin ürün temininin %36'lık kısmını tüccarlardan, %35'lik kısmını ise üreticilerden sağladığı görülmüştür. İşlenen ürünün satışının %41.67'sinin yurt içinde başka bir firmaya yapıldığı belirlenmiştir. Tesislerin yıl içinde tam kapasite ile çalıştığı toplam sürenin 90–270 gün arasında değiştiği ve tesislerin %91.67'sinde ürün sınıflandırma işleminin yapıldığı görülmüştür. Fabrikaların fındık kırma işlemlerinde %50 oranında üç kademeli taş silindirler kullanılmaktadır. Ayrıca, kırma işlemlerinde %75 oranında standartlara uyulduğu gözlenmiştir. Bununla birlikte, sadece 12 fabrikadan 5'inde kabuklu fındığın seçiminde elle seçim+lazerli seçim sistemlerinin beraber kullanıldığı görülmüştür.
This study was carried out by face to face survey with 12 hazelnut cracking factories in Samsun province in 2017.According to the results of the research; it was found that when the plants were operating at full capacity, they had run about 1278 personnel, of which 1037 were unqualified personnel and that the enterprises had at least one engineer. It is seen that the enterprises provide 36% of the products from the merchants and 35% from the producers. It is seen that 41.67% of the sales of processed goods is made to another firm in the country. The total time the facilities are operating at full capacity during the year has varied between 90 and 270 days. It was observed that 91.67% of the facilities had product classification. In the hazelnut cracking process of the plants, 50% three-stage and 25% four-stage stone cylinders are used. In addition, it was observed that 75% of the breaking standards were observed. However, only 5 out of 12 factories were found to use manual selection + laser selection systems in the selection of shell nuts.
