Samsun'da Yetiştirilen Karalahnaların (Brassica oleracea var. acephala) Bileşimi Üzerine bir Çalışma

Abstract

Bu çalışma, Samsun'da yetiştirilen karalahanalarm genel bileşimini saptamak amacıyla yapılmıştır. Toplam22 örnekte yapılan analizler sonucunda ortalama olarak kuru madde % 12.01, kül %1.73, ham selüloz %0.48, protein% 4.01, pH 6.18, askorbik asit 87.05 mg/kg, potasyum 560.77 mg/100g, kalsiyum 324.33 mg/100g, magnezyum80.70 mg/100g, sodyum 13.92 mg/100g, demir 4.51 mg/100g, mangan 1.12 mg/100g ve çinko 0.27 mg/100g bulunmuştur.The aim of this study was to determine the general composition of kale grown in Samsun. According to the results of the analysis, the average composition of total 22 kale samples was found as 12.01% dry matter, 1.73% ash, 0.48% crude fiber, 4.01% protein, 6.18 pH, 87.05 mg/kg ascorbic acid, 560.77 mg/100g potassium, 324.33 mg/100g calcium, 80.70 mg/100g magnesium, 13.92 mg/100g sodium, 4,51 mg/100g iron, 1.12 mg/100g mangane and 0.27 mg/100g zinc.
