Samsun İlinin Sahip Olduğu Gastronomi Turizmi Potansiyelinin Değerlendirilmesi

Abstract

Yeme içme insanlığın varoluşundan bu yana en temel ihtiyaçtır. Maslow'un ihtiyaçlar hiyerarşisinde de olduğu gibi her zaman hayatımızın ilk basamağında yer almaktadır. Turizm alan yazını taratıldığında yeme içme kavramına daha çok gastronomi turizmi başlığı altında yer verildiği görülmektedir. Dünyada ve ülkemizde değişen turizm trendleri sayesinde yönümüzü deniz kum güneş üçlüsünden çevirip, alternatif turizm türlerine dönmüş bulunmaktayız. Gastronomi turizmi yılın her ayında turistleri destinasyona çekme potansiyeline sahiptir. Bu yönüyle mevsimsellikten etkilenmemesi onu diğer turizm türlerinden bir adım öne taşımaktadır. Samsun konumu ve iklimi itibari ile ülkemizin sayılı, Karadeniz Bölgesinin ise en önemli turizm destinasyonu olma potansiyeline sahiptir. Samsun; doğa turizmi, kültür turizmi, spor turizmi ve sağlık turizmi olmak üzere birçok alternatif turizm türüne ev sahipliği yapmaktadır. Bu çalışmada Samsun ilinin gastronomi turizmi potansiyelini ortaya çıkarmak ve Samsun'un yerel yemek kültürünün turistik ürün olarak belirlenmesinin, kentin turizmine sağlayacağı faydayı ölçmek amaçlanmıştır. Bu amaç doğrultusunda nitel araştırma yöntemlerinden yüz yüze görüşme tekniği kullanılarak, 14 yarı yapılandırılmış mülakat sorusuna, Samsun'da turizme yön veren 17 turizm paydaşından cevap alınmıştır. Elde edilen veriler analiz edilmiş ve bulgulardan yola çıkarak Samsun gastronomi turizmi için öneriler geliştirilmiştir.

Eating and drinking has been a basic need since the existence of mankind. As defined in Maslow's hierarchy of needs, they are always ranked as the fundamental aspects of our lives. When searching literature in the area of tourism and food, it has been found that they are mainly under gastronomic tourism. Due to the changing tourism trends in the world and in our country, we have turned our direction from the sea sand sun trio to alternative tourism types. Gastronomy tourism has a potential to attract tourists to certain destinations every month of the year. In this respect, the fact that it is not seasonally affected, it is one step ahead of other tourism kinds. Due to its location and climate, Samsun has the potential to be one of the renowned tourism destinations of our country and the most important destination in the Black Sea Region. Samsun hosts many alternative tourism types; such as, nature tourism, cultural tourism, sports tourism and health tourism. The aim of this study is to bring to light the gastronomic tourism potential of Samsun province and to evaluate the benefit of defining Samsun's local food culture as a touristic product on the tourism of the City. In accordance to this objective, one of the qualitative research techniques, 14 half-structured face-to-face interview questions were applied to 17 tourism stakeholders who guide tourism in Samsun. The data obtained were analysed and based on the findings, recommendations were developed for gastronomy tourism in Samsun.
